Internet salad at the church potluck

It started several years ago. The Redhead (my husband) was living in the country where he was the pastor of 3 little churches. As country churches do, these churches loved potlucks and had them often. Early in The Redhead’s tenure, one of the churches held a potluck when I was in town, so I felt compelled to bring a dish to share. With little time to cook, I made Internet Salad – a sort of Asian coleslaw which is a family favorite that got its name because I found the recipe for my mom on the internet which to her was unbelievable (A recipe on the internet? Who knew?). I was proud of my contribution to the event and my pride and excitement wasn’t deterred when I placed it on the overflowing salad table. After all, everyone loves my Internet Salad! Well, apparently salads that don’t contain mayonnaise, jello or other seriously fattening ingredients were not well received at this church’s potluck because when I finally got to the go through the food line, I realized that no one – seriously NOT ONE PERSON – had taken any of my Internet Salad! There were more than 200 hundred people at this potluck and no one had tried my salad. Serious bummer.

Now to the present. I’m a newlywed (I can still say that right – its not quite a year yet!), who doesn’t really know how to cook, unless of course boiling pasta from a box with sauce from a jar counts, which I’m guessing it doesn’t – does it Mom? I grew up in the Midwest eating comfort food and live in the South, land of fried everything (seriously they fry vegetables here!). I’m a comfort food-loving, chocoholic who has developed a hankering for southern food from the years I’ve lived south of the Mason-Dixon line. The Redhead is a meat-and-potatoes, southern boy with a picky palate. The Redhead and I aren’t getting any younger, and we need to start eating better, like yesterday. So, I’m learning to cook and cook light. Want to come along on the journey?
